  1. Preheat the oven to 400.
  2. Chop purple onion, rosemary, and thyme. Crumble feta, if necessary. Slice olives.
  3. Hand whisk eggs, rosemary, thyme and salt in a medium mixing bowl until well combined and uniform. Add in feta cheese and stir to combine.
  4. In a cast iron (or other oven-proof skillet), melt ghee over medium heat. Add in onions and saute until softened, about 5 minutes.
  5. Add in spinach, stirring to combine, and let wilt.
  6. Mix onions and spinach around until they are distributed through the pan. Arrange olives evenly in the pan as well.
  7. Carefully pour egg mixture into the pan and move to preheated oven, being careful not to slosh the contents.
  8. Cook at 400 for 15 minutes, or until the top starts turning a golden brown. Be careful not to overcook! (You can also insert a toothpick to see if it comes out clean)
  9. Let sit for 10 minutes before serving. If you are cooking in a cast-iron pan, the frittata should come away from the edges as it rests.
