Fried Cauliflower Rice with Edamame

- In a large skillet heat the olive. Add the onion and carrot and sauté ~3 minutes until onion is tender and translucent and carrot starts to soften.
- Stir in the garlic, ginger, soy sauce and coconut aminos. Transfer the thawed and drained cauliflower to the pan and stir. Cook over medium-high heat for 5-7 minutes, until water starts to evaporate and the cauliflower "rice" looks like it is drying out.
- Stir in the edamame. Sauté for 3-5 minutes or until all the liquid has cooked off, and cauliflower is tender.
- Turn the heat down to low and move cauliflower rice to the outer edges of the pan, making a well in the center. Add the 2 tsp of sesame oil to the well and let get hot for about 30 seconds. You don't want the sesame oil to smoke.
- Add in the beaten egg and scramble in the center with a slotted spoon or whisk until the egg is just done. Remove from heat and incorporate the egg into the rice.
- To serve, top with sliced green onion and additional soy sauce (if desired).
