Whether you're recovering from a busy week or simply craving something clean and restorative, this turmeric detox soup is your go-to bowl of warmth and wellness.
Ingredients
Instructions
- Chop onion and mince garlic.
- Wipe mushrooms clean with a damp paper towel and quarter.
- Slice cabbage and rough chop.
- Trim tops off Brussels sprouts, and remove any outer leaves that are yellowing or have spots (or just don't look like you want to eat them!)
- Melt coconut oil over medium low heat, and add in onion. Saute until just starting to soften, about 3 minutes.
- Add in turmeric and garlic, and saute until bloomed (the mixture will be infused with the golden turmeric color and be aromatic.) This will be about 1 minute.
- Add in cabbage and Brussels sprouts, stirring and coating in the turmeric, garlic and onion mixture for 3-4 minutes. Be careful not to brown - we are just looking to infuse them with flavor and soften them slightly.
- Slowly add in the beef broth and salt, stirring until the mixture is well blended. Bring to a boil, reduce heat and simmer for 15-20 minutes. Season with salt & pepper to taste.
Notes
Serving size is about 1 1/2 cups. Can be made ahead and reheated.
